Healthier Version of the Korean Vegan Beef Dish

Besides my homemade almond milk recipe, I’ve never shared a dish on Instagram that was so widely embraced as this Korean Vegan Beef from lordbyronskitchen.com. It’s gone pretty viral. Daily, you’ve tagged me in your creations and I’ve screenshotted every single one! I’ve especially loved the videos of you serving the dish to your partners without revealing the dish is vegan. Their reactions are so good! They fully believed they were eating meat! This dish is proof that animal-free cooking can be 100% satisfying.
The original Korean Vegan Beef recipe would never be placed in the ‘health food category’ (it does contain a half cup of brown sugar), but that’s okay because it’s cruelty-free and splurging on comfort food is very essential from time to time! If you are in the mood for a slightly healthier version of the dish, try this recipe with half lentils/half beefless beef, less sugar and an injection of greens. - 1 large red onion (chopped medium-fine)
- Splash avocado oil
- 1/2 package of Gardein beefless ground round
- 1 3/4 c. cooked lentils
- 5 cloves garlic (minced)
- 1/3 c. tamari or soy sauce
- 1/3 c. brown sugar
- 1 tbsp sesame oil
- 2 tbsp chopped ginger
- 1/2 tsp chili flakes
- Pinch black pepper
- 1 head broccoli
- White or brown rice
- Green onion
- Pinch sesame seeds
- Heat avocado oil in a medium to large pan over medium high heat. Add onions and sautee until translucent (~10 min). Add beefless beef, lentils and garlic and cook for another five to ten minutes (stirring often so none sticks to pan).
- In a small bowl, combine tamari and brown sugar. Whisk together until sugar is somewhat dissolved, then stir in sesame oil, ginger, chili flakes, black pepper.
- Pour sauce over the beefless beef / lentil mixture, cook for one minute, then serve hot over rice. Garnish with chopped green onions and sesame seeds and serve with broccoli. Enjoy!!
