Is there a flavour pairing more perfect than buffalo and caesar?! They are so droolworthy together. I’m pretty sure I’d get excited for any meal where both are present. This dinner, in particular, was a hit and was definitely on the simpler side!! I’m all about cutting corners and reducing the number of ingredients needed per meal. I love that this spread has got greens (lettuce), protein (tofu), health fats (olive oil in dressing) and good carbs (whole wheat tortillas). It looks indulgent, but if you refrain from going too heavy on the ranch dressing, it’s somewhat light and definitely nutritious. Directions
Chop your tofu into bite-sized cubes and toss with olive oil and buffalo sauce. Set aside.
Wash and chop your lettuce, then transfer to a salad bowl and toss with a generous amount of caesar dressing.
Bake or air-fry your buffalo tofu. For air-fryer, bake for 15-20 minutes at 350F. For the oven, roast for 20 minutes at 400F.
Warm your tortillas so they’re malleable, then begin to add toppings in the following order: hummus or mashed avocado, caesar salad, buffalo tofu, ranch drizzle. Add a squeeze of fresh lemon, if you wish. Enjoy!
